New England Kitchen is established.

Founded by Ellen Swallow Richards, it is located initially at 142 Pleasant Street. Its purpose is to “Cook the cheapest and most nutritious food materials by better methods than are commonly in use, and to sell the same at moderate prices for consumption at home.” The organization sets up a facility that provides working women and immigrants with affordable lodging, public or “diet” kitchens, day nurseries, and healthcare, and sells inexpensive and nutritious food for them to take home for their families. Similar “kitchens” are subsequently established in Providence, New York City, and Chicago.
